Chicken-of-the-Woods Hot Wings

This is one of our favorite ways to prepare chicken-of-the-woods.


1-1.5 lbs Chicken-of-the-Woods trimmed and cleaned
1-2 eggs
1/2 cup milk
3/4 - 1 cup flour
1/2 tsp Sage
1/4 tsp Oregano
Oil for frying
Salt and pepper to taste
For the Blue Cheese Dressing
1/4 cup Crumbled blue cheese
1/4 cup Mayonaise
1/2 cup sour cream
Splash of milk or water
  1. Mix together all ingredients for the Blue Cheese Dressing, adjust amounts to reach desired consistency. Set aside to rest.
  2. Mix flour, milk, eggs, herbs together in a bowl and set aside
  3. Slice mushrooms into pieces approximately 1 inch wide x 3 inches long. Cut from the leading edge towards point of origin
  4. Sauté mushroom on each side until lightly browned
  5. Remove from heat and place on a plate to cool
  6. Dredge through batter
  7. Sauté on each side again until brown
  8. Remove from heat, place in a bowl
  9. Cover in your favorite hot sauce and serve with the Blue Cheese Dressing
