Lovin' on Lion's Mane

 Lovin' On Lion's Mane Lion's Mane, or Hericium erinaceus,  is an edible & medicinal mushroom that has been consumed throughout the world for thousands of years.  And it is one of our favorite mushrooms here at Asheville Fungi.  You just need to take one bite of this uniquely delicious mushroom to understand our infatuation.   Lion's Mane has a delicate flavor and texture reminiscent of crab meat.  CRAB MEAT PEOPLE!!!  Yep, all you really have to do to appreciate it's flavor is saute it in a little butter or olive oil and some garlic, add a touch of sea salt to finish...

King Trumpet Mushroom Risotto

King Trumpet Mushrooms are truly the king of mushrooms...at least as far as I'm concerned. King Trumpets do not cook down like many other mushrooms do. And the flavor...simply fantastic.  They were made for making risotto with.   Happy Cooking... Wild Mushroom Biscuit Breakfast Casserole

Breakfast casserole is such a great "go to" for Christmas morning.  It's always nice to change it up a bit though.  So, I thought that I would try it with busicuits instead of bread.  And, as always I had to add some wild mushrooms.  I found them this week during the unseasonably warm weather.   Hope you enjoy it as much as we did...
